There’s nothing better than throwing a last minute soirée… and why not use NYFW as an excuse to do so? Have the ladies over, whip up some Espresso Martinis  and bring out your inner Fashion Police while discussing the emerging new trends!

 

These little hors d’oeuvres (which I stole from my mother-in-law) are my favorite for last minute get-togethers, as they are extremely quick and always a crowd pleaser! Plus, they’re very versatile – you can fill them with just about anything!

CURRIED CHICKEN SALAD CUPS

Bite-size, packed with flavor and not overly heavy, these are the perfect way to get your guests nibbling without having to work too hard!

INGREDIENTS

12 square wonton wrappers

Olive oil

1 rotisserie chicken, meat shredded, bones and skin discarded

¼ cup light mayonnaise

¼ cup sour cream

1 tbsp curry (or more, to taste)

2 tsp Dijon mustard

½ tsp cumin

2 carrots, peeled and diced small

3 green onions, diced small

2 celery ribs, diced small

¼ cup raisins

¼ cup dried cranberries

Salt and Pepper to taste

PREPARATION

For the crunchy baskets:

1. Preheat oven to 350˚

2. Lightly brush each wonton wrapper in olive oil.

3. Press each wonton wrapper into a cup of a regular size muffin tin.

4. Bake for 10-12 minutes until golden brown.

5. Let cool.

For the Curried Chicken Salad:

1. In a large bowl, combine the shredded chicken with half of the mayonnaise, and sour cream.

2. Add in the curry, Dijon, cumin, carrots, green onions, celery, raisins and cranberries.

3. Add in the rest of the mayonnaise and sour cream as needed, depended on how creamy you like it.

4. Season with salt and pepper and add extra curry powder in as needed.

5. Fill each basket with curried chicken salad!

BROWNIE BERRY BASKETS

These are essentially the dessert version of these little wonton baskets! They can really be filled with almost anything you like. As a lighter dessert, I like fresh berries, a touch of brownie and a dollop of whipped cream, but you can go all out! Try filling them with pound cake, strawberries and whipped cream, or chocolate mousse and cookie crumbles… the options are endless!

INGREDIENTS

12 square wonton wrappers

Olive oil

Cinnamon

3 small chocolate brownies

1 package blueberries, washed

1 package raspberries, washed

Whipped cream

Powdered Sugar

PREPARATION

For the crunchy baskets:

1. Preheat oven to 350˚

2. Lightly brush each wonton wrapper in olive oil.

3. Put a touch of cinnamon in a small sieve and dust lightly over the wontons.

4. Press each wonton wrapper into a cup of a regular size muffin tin.

5. Bake for 10-12 minutes until golden brown.

6. Let cool.

For the filling:

1. Crumble the brownies and fill the base of each wonton crisp with a small amount of brownie. Reserve about 2 tablespoons of brownie for crumbling onto the top.

2. Fill each basket with berries to the top.

3. Top with whipped cream.

4. Sprinkle with brownie crumbles.

5. Arrange the dessert baskets on a tray.

6. Put some powdered sugar into a small sieve and dust over the desserts!
