One of my favorite ways to preserve herbs is in olive oil ice cubes. Instead of just freezing or drying the herbs, why not make something that will make your weeknight dinners easier and delicious? These cubes take a few seconds to make and can be added to anything. Just sauté a cube or two, add in your vegetables or meat, and your house will smell like fresh herbs in no time!

 

Make sure to use tougher herbs that are used in cooked dishes (oregano, rosemary, sage, thyme, etc) instead of things like mint/cilantro etc as they hold up better to cooking! You can either make separate cubes for each type of herb, or mix them depending on flavor.

 

INGREDIENTS

A handful of herbs

1 -2 cups Olive Oil (the better you use, the better they’ll taste!)

PREPARATION

1. Place your chopped herbs into each cube of the ice cube tray. I like to do mine half full.

2. Pour in olive oil until the herbs are covered.

3. Cover with plastic wrap and freeze overnight.

4. Remove the frozen cubes and place into freezer bags. Store in the freezer and use as needed!
